Chicken Lo Mein | Recipe

In middle school we had to bring in a dish sharing a part of our culture with the class, I had no idea what to bring. So I asked my dad if he could help make something and he immediately thought; lo mein. It’s a very versatile and quick dish— and for a classroom of kids; it’s also very affordable to make. 

My dad made a vegetable lo mein for the class; he said he likes it better with chicken, but really you can add whatever protein you like to this dish. Using lo mein egg noodles; vegetables + meat, it’s also a great dish when you have leftover produce in the fridge to make something delicious. 

Along with making the lo mein, my dad came in and talked about Chinese history and characters, the dish was such a hit that the teacher asked if he had made more. But my dad said it wasn’t a free restaurant lol. This is such a versatile and easy dish, that you can make with restaurant style finesse right at home! Lectures by my dad not included. 😉

SHAWTY GOT LO, LO, LOOO [MEIN]:

  • 2/3 bag of lo mein egg noodles

  • 1 tbsp shao xing wine

  • 2 tsp sesame oil

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1/2 tbsp dark soy sauce, more for color if desired

  • pinch of salt

  • 3 cloves of garlic, minced

  • sugar snap peas

  • carrots, julienned

  • red pepper, julienned

  • sesame seeds

  • 3-4 scallions, chopped long

  • neutral cooking oil

    MEAT MARINADE:

  • 3 chicken thighs, sliced medium

  • 1 tbsp soy sauce 

  • 4-5 garlic cloves, minced

  • 1 slice of ginger, julienned

  • 1/2 tbsp shao xing wine

  • touch of baking soda to tenderize

1. Mix your meat marinade and marinate for 15 mins
2. Prepare your noodles per package directions.
3. Heat up a pan with oil and add your chicken. Sear for a couple of minutes on medium high.
4. Once your meat is cooked 70%, add in your vegetables except for the scallions. Stir fry for a couple minutes until they begin start to become soft.
5. Add your drained noodles in along with all the sauces. Mix well together.
6. Add in your scallions and stir fry everything together until they start to soften. Remove lo mein from heat as the scallions will continue to cook afterwards.
7. Top with sesame seeds + enjoy! You can garnish with chili oil if you like!

*Note: if worried about overcooking the meat, you can prepare the meat first and set aside, then add everything back together when stir-frying.
